By far, my favorite thing about the Fall is that it is pumpkin pie season! I absolutely cannot describe how much I love it and how much I look forward to this season. Even though it is the season of losing your nice, summer tan, the pumpkin pie makes up for it :].
Pumpkin Pie
1 1/2 pints vanilla ice cream (softened)
3 eggs
1 3/4 cup pumpkin puree
3/4 cup white sugar
1/4 tsp. nutmeg (ground)
1/2 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground ginger
2(9-inch) unbaked pie shells
Preheat oven to 425 degrees. Place ice cream near heat to soften.
1. In large bowl, whisk together eggs. Stir in the pumpkin puree, sugar, salt, cinnamon, ginger and nutmeg.
2. Mix in soft ice cream until smooth.
3. Pour filling into pie shells.
4. Bake for 15 mins. Reduce heat to 350 degrees and bake an additional 30-40 minutes.
This is one of my mom's recipes and I love it. However, I still really love Entemann's the best but shh.
