Go Bananas :]

It's another cold and rainy day. Nothing tastes quite as good as comfort foods on these kinds of days. Right now, I could really go for my Dad's homemade banana nut bread. It's moist and delicious and definitely one of my favorites. This is a pretty common baked good, but if you haven't had it before, I DEFINITELY recommend.

Banana Nut Bread
[1 9x4-inch loaf]

Preparation: 20 mins.
Serves: 18

3 very ripe large bananas
2 eggs
1/2 cup butter or margarine
1 1/2 Tbsp. buttermilk or sour cream
1 tsp. fresh lemon juice
1 cup sugar
2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup chopped walnut or pecans


1. Place bananas, eggs, butter, buttermilk or sour cream, lemon juice and sugar into a blender container or work bowl of food processor fitted with steel blade. Whirl until smooth.

2. Mix together flour, baking powder and baking soda.

3. Pour banana mixture over flour mixture and stir just until flour is moistened. Stir in the nuts.

4. Turn into greased 9 1/2 x 4 1/2-inch bread loaf pan, or into 2 3 1/2 x 7 1/2-inch nut bread pans.

5. Bake at 350° F for 55-65 minutes or until bread tests done when a skewer is inserted in the center.

6. Allow to cool 5 minutes in pan, then turn out onto wire racks.

  3. I love banana nut bread! I've actually been wantingto look for a recipe, but haven't gotten the chance. Now I have one, and I'm going to make it!
